IKEA Vegetarian Menu Upgraded

Starting from the classic IKEA vegan menu, we’re upgrading it with a few culinary options that will transform the classic vegan menu into a savory vegetarian meal filled with lots of beneficial nutrients.

Ingredients

  • 1 big avocado (skin and seed removed)
  • handful of raisins
  • handful of walnuts
  • 2 hard boiled eggs (sliced)
  • 10-12 veggie balls from IKEA (Grönsaksbullar - soy-free, GMO-free, free of additives)
  • 1 big portion potato puree
  • a few florets steamed broccoli
  • a few florets steamed cauliflower
  • salt and pepper (optional)
  • butter (to taste, optional)

Instructions

  • Buy the vegan menu from any IKEA Restaurant. The vegan menu includes steamed vegetables, vegetable balls, and potato puree. Make sure to also get the extra boiled eggs which are sold separately.
  • Complete the menu by adding a handful of walnuts, a handful of raisins and one avocado.
  • Optional use salt and pepper if needed, as well as a few pieces of grass-fed butter on the side.

Notes

This menu is made of the vegan menu available at any IKEA Restaurant (steamed vegetables, vegan balls, potato puree), boiled eggs (also from the restaurant), plus a few extras that I brought with me.
The extras that I used to upgrade the IKEA menu are the following: avocado, walnuts, raisins.
